Chef of KO Prime at Kimpton's Nine Zero Hotel, Jamie Bissonnette introduces
Bostonians to modern steakhouses and collaborates with acclaimed Chef
Ken Oringer, the consulting chef and inspiration for the steakhouse.
The two culinary talents not only have a deep history, one that dates
back to Bissonnette's apprenticeship at Oringer's acclaimed Clio,
but also a successful future: The Improper Bostonian recently named
Bissonnette "Rising Star Chef" and KO Prime "Best New
Restaurant " of 2007.
An early bloomer in the kitchen, Bissonnette gravitated towards The
Discovery Channel's cooking shows rather than cartoons. By the age
of 19, he had already earned his Culinary Arts degree from The Art
Institute of Fort Lauderdale and he spent his early twenties "eating
and working" in Paris, San Francisco, New York and Phoenix. These
experiences fed his culinary drive and are conveyed in KO Prime's
sophisticated cutting-edge menu.
After working in some of Boston's most acclaimed kitchens, Bissonnette
is poised to attract both Boston natives
and the chic travelers of Nine Zero. At KO Prime he enjoys creating
charcuteries, unparalleled
entrees like Kobe Flat Iron and Kurabutu
Pork Shoulder and daily desserts, particularly lemon bars. When not
in the kitchen, Bissonnette is likely
to be found on the rooftop of Nine Zero,
which he transformed into a garden ripe with everything from mint,
tarragon, and edible flowers.
