Roelli Offers New Cheese Named For Local Phenomenon Gravity Hill

Roelli Cheese Haus continues to create original cheeses. The newest is Gravity Hill, an English Cheshire-inspired creation made with sea salt. Cheesemaker Chris Roelli describes it as a tangy, crumbly cheese with a milky flavor, dry texture and sweet finish.  “We make ours with unpasteurized cows’ milk and age it for about one year,” Roelli says. He recommends serving it as a table cheese or on a salad.

The cheese gets its name from the fabled Gravity Hill in Shullsburg, Wis., where cars are said to roll uphill, defying gravity.
 
Roelli is a fourth-generation cheesemaker whose Dunbarton Blue has quickly become a favorite of chefs, cheesemongers and cheese-loving consumers.
