Red Barn Edun Highlights Natural Milk Flavor of Pastured Herds

Red Barn Family Farms recently introduced Edun, its New Zealand-style raw milk Cheddar Cheese. New Zealand-style Cheddars are known to highlight the grassy flavors of their pastured herds. Edun highlights the natural flavors of milk produced by Red Barn Family Farms-style herds. Edun is the first cheese of its kind to be produced by farmers who adhere to “The Red Barn Rules”: a set of rigorous quality, operational and animal treatment standards. The cheese is made from unpasteurized milk and cream, and aged at least 60 days to create a rich, buttery flavor and firm texture. Crafted in small batches at Willow Creek Creamery, Edun is a versatile cheese, pairing well with crusty bread, apples and pears, or as an ingredient in quesadillas, paninis and quiches.
