Ziege Zacke Blue Makes Waves

Ziege Zacke Blue, the result of a collaboration between La Clare Farms and Roelli Cheese Haus, is a dry Jack-style cheese made with a combination of cow’s and goat’s milk.The cheese is cave aged, yielding a creamy texture with a slight tang at the front, sweetness on the finish, and rich, earthy notes.

Cheesemakers Katie Hedrich of LaClare Farms, the youngest cheesemaker to win Best of Show at the U.S. Cheese Championship in 2011 for Evalon, and Chris Roelli of Roelli Cheese Haus, maker of Dunbarton Blue and Red Rock, joined forces to create this cheese. In German, Ziege Zacke Blue means “goat cheese with a wave of Blue.”
