Nut Brown Ale Caerphilly Strikes A Chord with Beer Lovers

Harmony Specialty Dairy Food’s Nut Brown Ale Caerphilly is made in the age-old tradition of mining communities in Wales. The cheese is pressed to reduce moisture content, producing a light, flaky texture with flavor notes akin to Feta, Parmesan and Cheddar. At Harmony, the Caerphilly curds are milled, soaked in Nut Brown Ale from Bull Falls Brewery in Wausau, Wis., and then cave aged. The result is a visually striking cheese with heavy beer overtones.

The cheese took second place at the 2013 U.S. Cheese Championship in the Flavored Hard Cheese category.
